Beef, Semi-dried Tomato and Basil Burger with Apple Slaw

Ingredients

  • 1 Pack Perfectly Balanced Beef, Semi dried tomato and Basil Burger 
  • 2 tablespoons olive oil 
  • 4 wholemeal burger buns 
  • 1/2 cup goats fetta 
  • 2 tomatoes sliced 
  • 1/2 cup red onion finely sliced 
  • 1 cup rocket 
  • 4 tablespoons tomato relish 

Apple Slaw 

  • 1 cabbage, shredded  
  • 2 green apples, julienned  
  • 2 carrots, julienned  
  • 4 scallions, finely sliced  
  • 1/2 cup dried cranberries  
  • 1/2 cup sliced almonds
Apple slaw dressing 
  • 1/2 cup mayonnaise 
  • 1/4 cup sour cream 
  • 1/4 cup cider vinegar 
  • 2 tablespoons sugar 
  • 2 tablespoons honey 
  • 1/2 teaspoon ground mustard 
  • 1/2 teaspoon poppyseeds 
  • Salt and pepper 


Instructions

  1. In a small bowl, whisk mayonnaise, sour cream, vinegar, sugar, honey, mustard, poppy seeds, and 1/2 teaspoon pepper in a bowl. Cover and refrigerate at least for 30 minutes.
  2. Heat 1 tablespoon of oil in a pan, cook burgers for 5-6 minutes each side or until cooked through. Wrap in aluminium foil and set aside. 
  3. Place burger buns in oven until warm and golden.
  4. Assemble burger bun with lashings of tomato relish, onion, tomato, goat’s fetta and burger patty. 
  5. In a large bowl, combine the drained cabbage, apples, carrots, cranberries, and almonds. Whisk dressing to recombine and pour over slaw. Toss until evenly coated. 
  6. Serve up burgers with a side of apple slaw!
