Beef, Sweet Potato and Kale Meatballs with Noodles


  • 1 Pack Perfectly Balanced Beef, Sweet Potato and Kale Meatballs 
  • 200 g rice noodles
  • 300 g red cabbage, shredded
  • 100 g kale, shredded
  • 2 carrots, thinly cut into long sticks
  • 100 g snow peas

1 tablespoon of tamari sauce
1/2 lime, juiced
1/2 tsp of grated ginger
1 tablespoon of tahini


  1. Heat 1 tablespoon of oil in a pan on medium to high heat. 
  2. Cook meatballs for 10 minutes, or until fully cooked. 
  3. Cook noodles according to directions on pack, set aside.
  4. Combine red cabbage, kale and carrot sticks in a large bowl. 
  5. To serve, divide the meatballs, noodles, snow peas and salad mix among serving bowls.  
  6. Mix the dressing together and serve on top or to the side.
