Beef, Sweet Potato and Kale Meatballs with Noodles
Ingredients
- 1 Pack Perfectly Balanced Beef, Sweet Potato and Kale Meatballs
- 200 g rice noodles
- 300 g red cabbage, shredded
- 100 g kale, shredded
- 2 carrots, thinly cut into long sticks
- 100 g snow peas
Dressing
1 tablespoon of tamari sauce
1/2 lime, juiced
1/2 tsp of grated ginger
1 tablespoon of tahini
Instructions
- Heat 1 tablespoon of oil in a pan on medium to high heat.
- Cook meatballs for 10 minutes, or until fully cooked.
- Cook noodles according to directions on pack, set aside.
- Combine red cabbage, kale and carrot sticks in a large bowl.
- To serve, divide the meatballs, noodles, snow peas and salad mix among serving bowls.
- Mix the dressing together and serve on top or to the side.
